Upcoming Summer Series + Memorial Day Recipe Roundup

Happy long weekend! I hope you all have something exciting planned, whether its heading to the beach or mountains with friends, or getting to stay home and finally relax. Whatever you do, there will likely be food involved. So here are a few recipes that I know I’m crushing on for this Memorial Day Weekend (all posts are from Recipe Redux members!)

BUT before we get to the food, I want to announce the Healthy Toast Summer Series, which I will be starting next week. For the rest of the summer, the majority of my posts will feature healthy, summer-forward recipes to keep you eating well without guilt all season long. Appetizers and Small Bites:

~Who doesn’t love guacamole, shrimp, and mango? Even better when you can eat them together in one cute bite! Check out these Guacamole Shrimp Wanton Cups via RDelicious Kitchen

~Impress your guests with these deceptively easy vegetable spring rolls via Be Truly Nourished

~This veggie Mediterranean flatbread with homemade tzatziki sauce is both refreshing as well as delicious!

Sides and Salads:

~I LOVE beets! If you haven’t jumped on the beet train yet, this Roasted Beet and Arugula Salad with Orange Beet Vinaigrette via The Foodie Physician may just get you hooked.

~Strawberries are always a crowd-pleaser making this Strawberry Salad from Lively Table the perfect dish to bring to your celebrations this weekend.

Main Dishes:
