As 2018 comes to a close, I look back and laugh at how this was supposed to be our “quiet” year.
Between college and graduate school graduations, moving in together, getting engaged, getting married, and then moving across country to my homeland of Colorado, the past five years have been a blur. So, this time last year, Bry and I decided that 2018 would be our year to just settle into our new jobs and enjoy life.
Well, life had different plans. We ended up getting a puppy months before we had planned – and it was probably the best decision we made all year. Bern has turned us into full-on puppy parents that claim our dog is essentially the equivalent of a child (although, the potty training and sleeping through the night is much faster with a puppy). That month Bry also started a new job in a totally new area of engineering.
To top it all off, we bought our first home in May, and then took a two-week vacation in Norway, where we got to connect with distant relatives.
And that’s not even talking about the blog. While there will be a post coming up about all the happenings for The Healthy Toast, in short, I’ve been slowly turning blogging and writing into a true side business and, as of last week, officially founded Kelli McGrane Nutrition LLC!
But to truly reflect on the year, I wanted to highlight the 5 recipes that you’ve all been loving this year and 5 that made frequent appearances in The Healthy Toast household.

Your Top 5 Recipes of 2018
After coming in second last year, these sandwiches made the top of the list as the most popular recipe on The Healthy Toast. After taking one taste of the marinade you’ll understand why 😉
Down a spot from last year, these tomatoes have made the list of most popular recipes since 2016. Simple to make and packed with flavor, I have a feeling that these tomatoes will stay strong in 2019.
Again, the simple recipes win out. My roommate and I learned this technique in college, and I’ve continued to make all my eggs this way. If you love a runny yolk, this is the easiest way to achieve it!
This recipe surprised me this year, as it didn’t get much traction when I posted it almost two years ago. Again, another simple, healthy recipe that deserves the attention that it’s finally getting.
Oh man, you guys have taste! Bry and I make this almost weekly. Just 30 seconds in the microwave and less than 200 calories, who says you can’t have a warm, chocolately cake every day?
My 5 Favorite Recipes of 2018
Ever since making these lentil “meatballs” I’ve been obsessed with finding more ways to make meatless versions of some of my favorite meatball recipes. These buffalo ones in particular are one of my go-to meal prep recipes as they reheat perfectly and keep me nice and full all afternoon.
After the buffalo lentil meatballs, this is my second most frequent lunch option. Quick to make, budget-friendly, and packed with healthy fats and fiber, these sandwiches are my ideal lunch!
Out of all the recipes on the blog, this one probably took the most research to get just right. And let me tell you, the recipe is spot on. While you need hatch green chili peppers to make it, it’s well worth the wait for them to come into season again next summer.
If there’s one go-to meal in our house, it’s veggie quesadillas. And as much as I love Mexican-style recipes, this Greek twist on the cheesy classic has quickly become one of my favorite recipes on the blog.
Bry and I devoured this bread in two days. Yes, 12 slices, 2 people, and 2 days. And that includes also eating 3 meals a day. We just couldn’t stop eating this protein-filled zucchini bread – and neither should you 😉
