This roasted cauliflower with hummus is the ultimate creamy yet savory snack, appetizer or side dish that everyone will love! It’s also perfect for serving at a party as it’s both gluten-free and vegan-friendly.

I was beyond excited when Recipe Redux announced a recipe challenge using Sabra Hummus. While hummus has become much trendier in the past few years, I remember the first time ever having hummus. And unfortunately it wasn’t a good memory. The hummus I had was a bit grainy and had very little flavor. Needless to say I wasn’t sold. But then I was introduced to Sabra’s Pine Nut Hummus and instantly fell in love with how creamy and flavorful it was.
Flash-forward eight or nine years and my love for hummus is still going strong. Which is great as Sabra now has so many more flavors to enjoy! Be sure to check out Sabra’s website to see all of their products (including their sandwich spreads, which have become a staple in our house).
While I typically use hummus as either a dip for vegetables or smothered over a pita sandwich, I wanted to think beyond these classic hummus uses. One of my go-to easy dinners is hummus chicken, where I simply cover chicken with hummus and bake it, resulting in a super creamy yet healthy dinner. I took this idea of smothering food in hummus and applied it to cauliflower. Oh my word, so good! And ridiculously easy.
Simply roast (or grill) the cauliflower florets. Once softened, place in a large mixing bowl and add about ¾ of a container of Sabra hummus. I used the roasted red pepper, but honestly any flavor would be delicious with the cauliflower. For a little zing I added a squeeze of lemon juice, but depending on the flavor of hummus you use you may not need it. Mix carefully as not to smush the cauliflower, and then serve. Again, so easy and very customizable. Besides changing up the hummus flavor you can try this with other vegetables based on the season.

I have never thought about combining hummus and cauliflower but this looks and sounds fantastic!
I’d had roasted cauliflower in a wrap that contained hummus before so I knew I was going in the right direction, but I had no clue just how delicious the simple combo of the two would be! Definitely give it a try 🙂

I love me some roasted cauliflower! Never thought to add hummus but this is such a simple way to kick up the flavor.
It’s super simple! And with so many flavors of hummus you can change it up quite a bit.
