Simple Feta and Watermelon Salad

  • 1 small personal-sized watermelon, sliced into cubes (about 4-6 cups cubed)
  • Juice and zest of ½ a lime
  • 1 tablespoon extra-virgin olive oil
  • ¼ cup crumbled feta cheese
  • Pinch of salt
  • Optional: diced jalapeno or fresh mint


  • Slice watermelon into cubes, discarding the rind.
  • Place watermelon cubes in a large mixing bowl and toss with olive oil, lime juice, zest and a pinch of salt. Sprinkle with feta and any optional toppings.
  • Serve immediately or chill in fridge up to overnight.
