This roasted cauliflower with hummus is the ultimate creamy yet savory snack, appetizer or side dish that everyone will love! It’s also perfect for serving at a party as it’s both gluten-free and vegan-friendly.

1large head of cauliflower
Pinchsalt and pepper
1container of Sabra Hummusany flavor, I went with Roasted Red Pepper
Optional: squeeze of lemon juice
Preheat oven to 425F. Meanwhile cut cauliflower into individual florets and toss with olive oil, salt and pepper. Place florets in a single layer on a large baking sheet.
Bake for 15-20 minutes, or until soft and starting to brown.
Place roasted florets in large mixing bowl and add about ¾ of hummus container (you want enough to cover each floret). Taste and add squeeze of lemon juice if desired. Enjoy!
Feel free to grill instead of roast the cauliflower – it’ll work just as well!
