Roasted Cauliflower with Hummus

This roasted cauliflower with hummus is the ultimate creamy yet savory snack, appetizer or side dish that everyone will love! It’s also perfect for serving at a party as it’s both gluten-free and vegan-friendly.

Ingredients

  • 1 large head of cauliflower
  • 1 tablespoon olive oil
  • Pinch salt and pepper
  • 1 container of Sabra Hummus any flavor, I went with Roasted Red Pepper
  • Optional: squeeze of lemon juice

Instructions

  • Preheat oven to 425F. Meanwhile cut cauliflower into individual florets and toss with olive oil, salt and pepper. Place florets in a single layer on a large baking sheet.
  • Bake for 15-20 minutes, or until soft and starting to brown.
  • Place roasted florets in large mixing bowl and add about ¾ of hummus container (you want enough to cover each floret). Taste and add squeeze of lemon juice if desired. Enjoy!

Notes

Feel free to grill instead of roast the cauliflower – it’ll work just as well!
