Dark Chocolate Mini Almond Butter Cups

Ingredients

  • 3.5 ounces dark chocolate I used a sea salt dark chocolate
  • 3 tablespoons creamy almond butter
  • 2 teaspoons coconut oil
  • Optional: sea salt

Instructions

  • In a double boiler, melt dark chocolate.
  • Spoon ½ teaspoon of melted chocolate into 10 mini liners, lightly pushing the chocolate about ¼ of the way up the sides to form a cup-like shape. Freeze for 10 minutes, or until the chocolate is set. Meanwhile, keep the remaining melted chocolate in the double boiler.
  • While the chocolate hardens, mix together the coconut oil and almond butter until creamy. If your coconut butter is on the hard side, you can soften it in the microwave for 15-20 seconds.
  • Remove mini liners from freezer and spoon 1 teaspoon of almond butter filling in the middle of each. Spoon ½ teaspoon of melted chocolate over the top to cover. If you didn’t use salted chocolate, sprinkle the tops of each almond butter cup with a little sea salt. Note: you may have extra chocolate leftover, I recommend scooping it up with fruit 😉
  • Return mini cups to freezer for 1-2 hours, or until hardened. Keep stored in the fridge for up to 5-7 days.
