Crockpot Quinoa Chili

Let your slow cooker do all the work with this meatless quinoa chili.

Ingredients

  • 4 cups low-sodium vegetable broth
  • 1 cup uncooked quinoa
  • 1 can black beans drained and rinsed
  • 1 can kidney beans drained and rinsed
  • 1 can white beans drained and rinsed
  • 1 28- oz can diced tomatoes with juice from can
  • 1 4.5-oz can diced green chili peppers
  • 1 red or green bell pepper diced
  • 1 carrot diced
  • 1 onion diced
  • 1 cup frozen corn
  • 4 cloves garlic minced
  • 4 tsp chili powder
  • 1/2 tsp cayenne
  • 3 tsp salt
  • 2 tsp pepper
  • 2 tsp cumin
  • 2 tsp oregano

Optional sides and toppings

  • Cornbread
  • Plain Greek yogurt
  • Shredded Cheese
  • Avocado slices

Instructions

  • Rinse and drain beans, chop vegetables, then add all ingredients to the crockpot.
  • Cook on high for 4 hours (or until the quinoa have popped and are fluffy).
  • Serve with side of cornbread and toppings of choice.
