Ingredients

low-sodium vegetable broth

uncooked quinoa

can black beans
drained and rinsed

can kidney beans
drained and rinsed

can white beans
drained and rinsed

with juice from can

red or green bell pepper

Optional sides and toppings
Cornbread

Avocado slices
Instructions
Rinse and drain beans, chop vegetables, then add all ingredients to the crockpot.
Cook on high for 4 hours (or until the quinoa have popped and are fluffy).
Serve with side of cornbread and toppings of choice.
