Berry French Toast Casserole

Prepped the night before, this berry french toast casserole is perfect for brunch.

  • 8 slices bakery-style sourdough bread the one I bought wasn't pre-sliced but contained 8 servings based on the nutrition label
  • 1 pint fresh strawberries rinsed
  • 6- oz fresh blackberries rinsed
  • 1/3 cup honey
  • 1 Tbs cornstarch
  • 1 cup unsweetened vanilla almond milk any milk will work
  • 6 eggs
  • 1 Tbs vanilla extract
  • 1 tsp cinnamon
  • Maple Syrup for topping


  • Cut up strawberries and place in medium-sized mixing bowl with blackberries, honey, and cornstarch. Stir well.
  • Lightly coat 9 x 13 casserole pan with baking spray and place 1/2 of the berry mixture on the bottom of the pan.
  • Cut or tear bread into 1"-thick cubes and place in pan on top of berries.
  • Whisk together milk, eggs, vanilla, and cinnamon. Pour evenly over bread cubes.
  • Top with remaining berries and cover. Place in fridge for 4 hours or overnight.
  • When ready to bake, preheat oven to 375°F. While oven preheats, let casserole sit out on the counter.
  • Once the oven is preheated, place the casserole on the middle shelf and bake for 25-30 minutes, or until the bread starts to brown.
  • Remove from oven, slice, and enjoy!
