  • ½ cup pumpkin puree
  • 1 1/2 cups plain Greek yogurt can also use a lightly sweetened vanilla or pumpkin-spiced Icelandic-style yogurt
  • ½ cup granola or crunchy cereal
  • 2 tablespoons natural almond butter
  • Optional: pumpkin chia, or hemp seeds for extra crunch and nutrition


  • Set out two parfait glasses or small bowls. Layer pumpkin puree and Greek yogurt in each glass. Option to add almond butter next followed by the granola, or microwave the almond butter until soft and drizzle it over the top of the granola. Enjoy immediately.
