1 1/2cupsrolled oats
1/2cupvegan vanilla protein powderI used Sun Warrior
1/2teaspoonpure vanilla extract optional
3 to 6tablespoonsunsweetened vanilla almond milkor milk of choice
Pulse oats into a coarse flour using a food processor. If cashew butter is hard, microwave it in a small bowl for 20 seconds.
Combine oats, protein powder, salt, cashew butter and maple syrup in a medium mixing bowl and stir well to combine. If using vanilla extract, add it in now.
Slowly pour in milk of choice. Depending on what kind of protein powder you use, you may need more or less milk. They key is to get to a sticky cookie dough-consistency.
Next, pour the mixture into an 8 x 8-inch container. I used a glass container and didn't have any problems with the bars sticking, but to be safe you may want to put down a layer of parchment paper. Note for thicker bars, use a smaller container. Add sprinkles on top if using.
Place bars in freezer for 15-20 minutes or until firm. Slice into 12 bars and store in the fridge for up to 7 days or in the freezer for 3 months.
