Sugar Cookie Protein Bars

Sugar cookies aren’t just for dessert. These homemade protein bars are easy to make and taste like a treat!

  • 1 1/2 cups rolled oats
  • 1/2 cup cashew butter
  • 1/2 cup vegan vanilla protein powder I used Sun Warrior
  • 1/2 tsp salt
  • 1/4 cup maple syrup
  • 1/2 teaspoon pure vanilla extract optional
  • 3 to 6 tablespoons unsweetened vanilla almond milk or milk of choice
  • Sprinkles optional


  • Pulse oats into a coarse flour using a food processor. If cashew butter is hard, microwave it in a small bowl for 20 seconds.
  • Combine oats, protein powder, salt, cashew butter and maple syrup in a medium mixing bowl and stir well to combine. If using vanilla extract, add it in now.
  • Slowly pour in milk of choice. Depending on what kind of protein powder you use, you may need more or less milk. They key is to get to a sticky cookie dough-consistency.
  • Next, pour the mixture into an 8 x 8-inch container. I used a glass container and didn't have any problems with the bars sticking, but to be safe you may want to put down a layer of parchment paper. Note for thicker bars, use a smaller container. Add sprinkles on top if using.
  • Place bars in freezer for 15-20 minutes or until firm. Slice into 12 bars and store in the fridge for up to 7 days or in the freezer for 3 months.
