Healthy Summer Recipes

While it’s not officially summer yet, the warm weather is here and farmer’s markets are starting to pop up. While going hiking, swimming at the lake, and sunbathing are all things I love during the summer, my favorite part of summer is dining outside. So here are some of my favorite outdoor healthy eats for the summer – enjoy!

Breakfasts:

Strawberries and Cream Overnight Oats

These overnight oats are as delicious to eat as they are pretty to look at. However, you can skip the layering and just mix it all together for easier prep.

Peach Crisp Overnight Oats

Just looking at this recipe as me craving peach season towards the end of summer. My two favorite recipes, overnight oats and peach crisp, collide to make the ultimate summer breakfast.

Simple Asparagus Frittata with Ricotta Cheese

I love frittatas as they’re perfect for using up any leftover produce you may have picked up from the farmer’s market. So feel free to swap out the veggies, but definitely don’t leave out the ricotta!

Grilled Breakfast Pizza

Pizza is one of my favorite foods to grill, so it was only natural to make it breakfast-friendly as well. This pizza can easily be made veggie by leaving out the sausage and using some grilled veggies instead – just make sure to cook the vegetables before adding them to the pizza!

Grilling:

Grilled Chicken Tacos with Strawberry Salsa

These grilled tacos with strawberry salsa are perfect for backyard parties! Just double or triple the recipe and set out toppings for your guests to customize as they like. P.S. These tacos go great with homemade margaritas ;).

Grilled Avocado Fiesta Chicken  (can be baked)

This simple chicken recipe is packed with flavor, and it turns out great on the grill or baked in the oven. These also make for awesome leftovers in a sandwich the next day!

Juicy Bison Burgers

Summer wouldn’t be complete without bison burgers. Juicier and lower in saturated fat than beef, bison is a healthier option to satisfy those grilled burger cravings.

White Pizza with Chicken and Blackberry-Balsamic Glaze

An oldy but a goody – this blackberry chicken pizza is one of the first recipes I had on the blog (obvious by the picture quality), but it remains one of my all-time favorite recipes. No grill? No problem! This pizza also turns out great in the oven.

Grill-Free Entrees:

New England-Style Shrimp Po Boys

This is another summertime staple in our house. These po boys are perfect for preparing ahead of time and can easily be doubled or tripled for guests.

Summer Squash and Ricotta Pizza (can also be grilled)

Another farmer’s market-friendly recipe, this pizza has simple ingredients and is a lighter option for hot summer days. Feel free to bake in the oven or cook on the grill – just be sure to fully cook the veggies beforehand if grilling.

Chicken Fajita Pita Pizzas (can also be grilled)

Don’t want to bother rolling out pizza dough? Bring on the pita bread! These mini veggie fajita pizzas are perfect for family dinners or even lunches for kids home on summer break.

Baked Beet Burgers

Out of all the recipes on the blog, I probably make these beet burgers the most. Don’t like beets? I promise these burgers will change your mind!

Desserts:

Gingerbread S’Mores Bites

While there’s little I love more than sitting around a fire eating s’mores, sometimes a camp fire just isn’t feasible. To satisfy those marshmallow cravings whip up a batch of these s’mores bites! While I made my own marshmallows, you can just buy some from the store to make this recipe even easier.

Almond Ricotta with Berries

Another simple, but delicious recipe, this almond ricotta with berries is a light dessert that I often will have just as a snack.

Light and Lemony Cheesecake Bars

I love making these bars for parties as people are always shocked at how creamy and rich-tasting they are. While the original recipe is a lemon base with strawberry roses on top, you can also pop some blueberries into the batter instead.

Peanut Butter Cup Banana Foil Packets

While this isn’t the prettiest dessert, these grilled bananas stuffed with chocolate chips and peanut butter will please almost any crowd! Plus they’re super easy to make when camping.
