Overnight oats can be just as cozy as hot oatmeal. All you need is a swirl of cinnamon almond butter and a dash of vanilla extract!
Growing up my family was all about cereal. While the selection would vary from time-to-time, there was almost always a box of Special K, Lucky Charms, and Cinnamon Toast Crunch. And cereal wasn’t just a breakfast food. In my house, it was perfectly acceptable to have cereal for breakfast, lunch, dinner, or as a bedtime snack.
I’d like to say that since I’m now a dietitian with extensive nutrition education and a few years of experience under my belt, that I’m always snacking on fruits, vegetables, and proteins and making a nice balanced dinner every night. But that’d be a lie. Anytime Bry is out and I’m doing dinner alone, you can bet it’ll either be eggs and toast or a bowl of cereal. And while that doesn’t happen often, I still fill a coffee mug with cereal and almond milk when I need something comforting and crunchy to snack on at night.
So where is this going? Well, a couple weekends ago I poured myself some Original Puffins with unsweetened almond milk for a snack. As I was pretty hungry and knew that cereal alone wouldn’t fill me up for very long, I decided to add some cinnamon almond butter that we had bought from the Farmer’s Market that day. Oh my word. The crunch and slightly sweet flavor of the puffins combined with the cinnamon almond butter made it taste almost exactly like Cinnamon Toast Crunch Cereal (just a tad less sweet). I was so in love.
As with any sweet flavor combination that I come across, I knew I wanted to see if adding the cinnamon almond butter to my overnight oats would also bring my taste buds back to childhood breakfasts. Despite multiple attempts, I just couldn’t get the oats to taste like my childhood favorite cereal. However, I did find a flavor combination that felt so cozy and perfect for the transition into Fall!
For the almond butter, I used my newest local brand obsession: PB Love Co. For any of you in Denver, you have to check out PB love Co’s peanut and almond butters! So creamy and delicious, I love how natural the ingredients are and if you buy some from their Farmer’s Market stalls, you can usually get a discount for buying multiple jars at a time.
While it’s still been pretty hot during the days in Colorado, the mornings are definitely starting to feel more Fall-like and I’m loving it! I’ve even started breaking out my fall flavored teas to enjoy with the cool breeze in the morning. Currently Bry and I are in Norway where the cooler weather is definitely in full-swing. Hopefully that also means we’re getting some cozy coffee-shop time in, complete with homemade Norwegian baked goods and warm mugs of coffee!
So here’s a toast to a cozy breakfast to ease us into Fall!
Cinnamon Toast Overnight Oats
- 1/2 cup rolled oats
- 1 Tbsp chia seeds
- 1/4 cup plain Greek yogurt I use 2% fat
- 1/2 cup unsweetened almond milk
- 1/4 tsp vanilla extract
- 3 tsp cinnamon almond butter separated
- Place oats, chia seeds, yogurt, almond milk, vanilla extract, and 2 tsp of the cinnamon almond butter into a jar/bowl. Using a butter knife (trust me, it works better than a spoon!), stir well to combine.
- Place remaining 1 tsp of cinnamon almond butter in jar and gently swirl it on top of the oats using the butter knife.
- Place in fridge overnight. Enjoy nice and cold in the morning!
