Happy Friday!
As we get closer to the end of the year, I continue to reflect on all the changes that happened both personally and on the blog. 2017 was really the year of finding my footing: made it through an amazing first year of marriage, moved back to Colorado, and went from a full-time outpatient dietitian to a per diem dietitian doing a little bit of everything to finally landing a full-time position as a research dietitian. The blog also found its stride as Bry and I gave it a beautiful facelift (love having a software engineer for a husband 😉 ), started doing meal plans, and (mostly) posted a new recipe three days a week.
As exciting as 2017 was, I can honestly say that I’m hoping 2018 is a year of settling in and getting to just enjoy Colorado, my new job, and the blog. As much as I love recipe development and learning food photography, with the new job and finding time to see family and friends, I’ve found myself so focused on putting out content that I’ll rush putting up a recipe that just needs a few tweaks before it’s right. And while in the beginning I really wanted to grow my content, now that the blog is steady I want to turn my focus more consistently to content that I’m 100% proud of rather than quantity.
So, what does this mean for the Healthy Toast? Well, I won’t be posting three recipes per week any more as it just isn’t realistic with holding a full-time job as well. But don’t worry! I’ll still be posting two recipes per week and either a meal plan or round-up once a week. While many recipes will be new, I’ll also be revisiting some of my older ones to adjust either the recipe or pictures to reflect my continued growth in cooking and photography.
I’m excited to continue providing you all with healthy, simple recipes and fully appreciate you following me along on this journey!
