That’s right, just 5 ingredients to make either savory or sweet loaded breakfast sweet potatoes! 

And the great part is that the ingredients are likely ones you already have at home. Plus, you can easily customize this recipe using your favorite ingredient combinations. 

How to make breakfast sweet potatoes

Making sweet potatoes for breakfast couldn’t be easier! There’s just two main steps: cooking the sweet potatoes and then topping them. 

If making the savory version, you’ll also need to quickly cook some eggs. But even that step could be done ahead of time by making a batch of hard boiled eggs instead of scrambled. 

Tips for making this easy healthy breakfast recipe

  • If you prefer roasted sweet potatoes, cook your potatoes in a 425 degree F oven for 50-60 minutes.
  • These are great for meal prep! Simply microwave or roast a batch of sweet potatoes on Sunday, then reheat and top throughout the week. 
  • Any type of egg works. I call for scrambled eggs in the recipe, but poached, water-basted, fried, soft-boiled, or hard-boiled will all work!

Loaded Breakfast Sweet Potatoes Two Ways

Ingredients

For sweet loaded breakfast sweet potatoes

  • 2 small sweet potatoes washed
  • 2 tablespoons natural almond or peanut butter
  • 1 small banana sliced
  • ¼ cup blueberries
  • 2 tablespoons chia seed or hulled hemp seeds

For savory loaded breakfast sweet potatoes, washed

  • 2 small sweet potatoes washed
  • Non-stick cooking spray
  • 2 large eggs
  • Salt and pepper to taste
  • ¼ cup cooked or canned black beans
  • ¼ cup salsa
  • Fresh cilantro for garnish optional

Instructions

To make sweet loaded breakfast sweet potatoes

  • Using a fork, poke a few holes into each sweet potato and place the potatoes on a microwave-safe plate. Microwave on high for 5-7 minutes, flip, and cook for another 5-7 minutes, or until the potatoes are soft and easily pierced with a fork.
  • Slice the sweet potatoes in half. Top each sweet potato with 1 tablespoon of nut butter, banana slices from ½ a banana, 2 tablespoons blueberries, and 1 tablespoon of chia or hemp seeds. Enjoy immediately!

To make savory loaded breakfast sweet potatoes

  • Using a fork, poke a few holes into each sweet potato and place the potatoes on a microwave-safe plate. Microwave on high for 5-7 minutes, flip, and cook for another 5-7 minutes, or until the potatoes are soft and easily pierced with a fork.
  • While the sweet potatoes are cooking, place a small greased skillet over medium-low heat. In a small bowl, whisk together the eggs and a pinch of salt and pepper. Pour the eggs into the skillet. Using a heat-proof spatula, push the eggs around in the skillet to scramble them. Once cooked, remove from the heat.
  • Cut each sweet potato in half and top with eggs, black beans, and salsa. Option to garnish with cilantro. Enjoy immediately!

Notes

Nutrition for the sweet option: 258 calories, 11g fat (2g saturated), 36g carb, 9g fiber, 12g sugar, and 7g protein.
Nutrition for the savory option: 167 calories, 5g fat (2g saturated), 22g carbs, 5g fiber, 5g sugar, 9g protein.
