With school back in season, jazz up lunch with this fruity twist to traditional PB&J’s. All you need is a jar of natural almond butter (preferably unsweetened), ripe peaches, and sourdough or whole grain bread. For a little extra sweetness, add a drizzle of local honey on top!
Just a quick post for you all today as I have a bonus post coming your way tomorrow! This is one of those posts where I debated whether it’s too simple to post. But then I remembered that the whole point of this blog is to provide simple, healthy recipes to add some variety to your meals.
I love peanut butter sandwiches, with or without jelly. Yes, I’m one of those people who wanted my PB&J to be oozing with peanut butter and have just a slight spread of jelly. I also loved using banana slices instead of jelly or sometimes just a simple drizzle of honey on top of the peanut butter.
About a year ago I discovered the deliciousness of almond butter and banana sandwiches. And it got me thinking about other fruits that would be delicious with almond butter. Blueberries were an obvious favorite, but I was surprised to find how much I like the peach and almond butter combo.
As delicious as this is as a sandwich, my favorite way to eat this is as toast. However you eat it, I encourage you to indulge a bit and drizzle some local honey over the peach slices. For both the almond butter and honey, I used brands that I discovered at our local Farmer’s Market. Not only do I love supporting local businesses, but I’ve found the quality of these to be better than store bought. If you live in Colorado, I cannot recommend Bjorn’s Honey and PB Love Co. enough (and no, I’m in no way affiliated with either company).
