This is one of those posts where I debated whether it’s too simple to post.

But then I remembered that the whole point of this blog is to provide simple, healthy recipes to add some variety to your meals.

Are you more of a peanut butter or jelly fan?

I love peanut butter sandwiches, with or without jelly.

I’m one of those people who wanted my PB&J to be oozing with peanut butter and have just a slight spread of jelly.

I also loved using banana slices instead of jelly or sometimes just a simple drizzle of honey on top of the peanut butter.

About a year ago I discovered the deliciousness of almond butter and banana sandwiches.

And it got me thinking about other fruits that would be delicious with almond butter. Blueberries were an obvious favorite, but I was surprised to find how much I like the peach and almond butter combo.

My favorite way to eat this almond butter, honey, and peach sandwich is open-faced on toasted sourdough bread.

What you’ll need

  • Fresh peaches
  • Honey (preferably local)
  • Almond butter (I used a cinnamon one)
  • Sourdough or whole grain bread

For both the almond butter and honey, I used brands that I discovered at our local Farmer’s Market.

I love supporting local businesses, and have found the quality of these to be better than store bought.

If you live in Colorado, I cannot recommend Bjorn’s Honey and PB Love Co. enough (and no, I’m in no way affiliated with either company).

Almond Butter, Honey, and Peach Sandwich (or Toast)

Jazz up lunch with this fruity twist to traditional PB&J’s. All you need is a jar of natural almond butter (preferably unsweetened), ripe peaches, and sourdough or whole grain bread. For a little extra sweetness, add a drizzle of local honey on top!

Ingredients

  • 1-2 Tbsp natural almond butter without added sugars
  • 1/2 ripe peach sliced
  • 1-2 tsp local honey
  • 1-2 slices sourdough or whole grain bread

Instructions

  • If making toast, place bread in toaster first.
  • Spread almond butter on bread, then place peach slices on top. Drizzle with honey. Top with remaining slice of bread (if making sandwich). Enjoy!
