Roasted Chickpea and Broccoli Hummus Flatbread

Simple roasted chickpeas and broccoli make the perfect topping for this quick and easy flatbread pizza. Plus, these make for a great vegetarian dinner entrée or sliced up into appetizer-sized bites.

We have a lot of hummus in the fridge. A lot. And I’m not complaining, but hummus doesn’t last forever, so I’ve been trying to add it to our lunches and dinners whenever I can. This recipe is very much a pantry-ingredient recipe as I made it when we got home from our friends’ wedding this past weekend and had very little food in the fridge.

This recipe is another reminder of how tasty a simple recipe can be. Simply buy a package of whole wheat flatbread, spread hummus over the top, then sprinkle on herbed feta cheese and roasted broccoli and chickpeas. Five ingredients (not counting the spices) is all that’s between you and a healthy dinner, lunch, or even snack.

Roasted Chickpea and Broccoli Hummus Flatbread

Serves: 4 Cooking Time: 30 min

Ingredients

  • 1 head broccoli, cut into florets
  • 1 15-oz can chickpeas, drained, rinsed, and dried
  • 1 Tbsp olive oil
  • 1-2 tsp paprika
  • Pinch salt and pepper
  • 4 flatbreads
  • 1 cup hummus (any flavor you like)
  • ½ cup herbed feta cheese

Instructions

Preheat oven to 400F.

In a medium-sized mixing bowl, toss broccoli florets, dried chickpeas, olive oil, paprika, salt and pepper. Pour seasoned chickpeas and broccoli onto a large baking sheet in a single layer.

Roast 20-25 minutes, or until broccoli is soft and chickpeas crunchy.

Remove from oven, but keep oven temperature set to 400F.

Spread ¼ cup hummus over each flatbread and then evenly distribute roasted chickpeas and broccoli over each. Finally, sprinkle each flat bread with feta cheese then place flatbreads in the oven and baked 10-15 minutes, or until slightly crispy. Remove and serve!

    I’m so happy I am not the only person who eats chickpeas in multiple ways in one meal! I love adding both roasted chickpeas annnd hummus in my grain bowls, but this flatbread looks amazing!!

    Tip: hummus freezes beautifully! When I got the Sabra shipment, I immediately threw them all in the freezer. Thaw in the fridge overnight and it’s back to normal – no weird textures at all – promise! This flatbread looks delish – I love roasted broccoli on anything.

      I never thought about freezing it – that’s a great tip Christina! I’ll have to try that with some of the remaining containers I still have.
